Real Margaritas
RECIPE COURTESY OF INA GARTEN

Yield: 4 to 6 servings

Ingredients

1 lime, halved
Kosher salt
1/2 cup freshly squeezed lime juice (5 limes)
2 tablespoons freshly squeezed lemon juice (1 lemon)
1 cup Triple Sec
1 cup white tequila
2 cups ice, plus extra for serving

Directions

If you like margaritas served in a glass with salt, rub the outside rims of 6glasses with a cut lime and dip each glass lightly into a plate of kosher salt.

Combine the lime juice, lemon juice, Triple Sec, tequila, and ice in a blender and puree. Place extra ice in a cocktail shaker. Fill with margarita mix, shake well, and strain into glasses.

I have never seen Ina walk so fast. (Goes to grab pitcher) and it makes me so happy to know she’s probably an alcoholic.

Dark tequila= good and Light = bad is a common misnomer. Tequila blanco is just not aged in wood for as long as a reposado (the yellow one) or an añejo (the amber/brown one that Ina calls 'good') The fact that Ina is using other alcohols and no sweetening ingredients in this recipe is why the more mellow, blend able flavors of a blanco work best. If you're adding in a little agave nectar, which I recommend, 1-2 tbsp for a batch this size, go ahead and use a reposado for a little more accent on that lemony flavor. And always, Always, ALWAYS buy 100% de agave tequila. If you don't, they cut it with the parts of the cactus that have sulfites and that's where you get the "te-kill-ya" hangover everyone loves to gripe about
