hi I use a canon full frame camera and I find that when taking pictures of red or pink flowers it looks as if it is overexposed so I try to use EC and also higher aperture and higher & shutter speed. I also tried to set everything back default settings. it can be corrected in post processing but I prefer to get right in camera first.

It doesn't really work like that. Fir the most accurate results, you need to white balance the camera using custom white balance function and a white card. You can just wing it but that's not how it's supposed to work. You might as well just leave it on auto then.
