Greek Orzo Pasta Salad

Orzo or Ditalini? 👀 Either way, here’s the recipe:

6 tbsp good quality olive oil
2 tbsp lemon juice
2 tsp dijon mustard, to taste
1 tsp honey, to taste
salt and pepper, to taste
1 tsp oregano
2 cloves garlic, grated

1 lb orzo pasta, cooked and cooled
1 cup cherry tomatoes, halved
1/2 cup red onion, diced
1/2 cup kalamata olives, halved, to taste
3/4 cup english cucmber, diced
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped (to taste)
6 oz feta cheese, crumbled

STEP 1:
In a mason jar or small mixing bowl, combine your olive oil, lemon juice, dijon, honey, oregano, salt, pepper, and grated garlic. Shake or mix until fully combined.

STEP 2:
In a large mixing bowl, add in your cooled orzo pasta. Add in the remainder of your ingredients, pour over your dressing, and toss to combine. Serve with crumbled pita chips (optional).
