Easy 20 Minute Mediterranean Orzo Salad

INGREDIENTS:
🔹 1 ½ cup dry orzo pasta
🔹 1 pint grape or cherry tomatoes halved
🔹 2 green onions trimmed and chopped (both white and green parts)
🔹 ½ green bell pepper seeds removed, chopped
🔹 1 cup packed chopped fresh parsley about 1 ½ ounces
🔹 ½ cup packed chopped fresh dill about 0.5 ounces
🔹 ¼ cup sliced pitted kalamata olives about 1 ounce
🔹 2 teaspoons capers
🔹 Feta cheese to your liking

For the Dressing
🔹 1 lemon zested and juiced
🔹 ¼ cup extra virgin olive oil
🔹 1 garlic clove minced
🔹 1 teaspoon oregano

I recently discovered your channel and this is the first recipe I've tried because I happened to have all the ingredients on hand. Ahhh-mazing!!! I tossed in a can of rinsed and drained chickpeas to make it a meal. And the hubs loved it too... Thank you!

Haha, loved the scenes with you fiddling with that lemon juicer. I too run into that situation on occassion, , but I cut the lemon in smaller pieces. For me, it's harder trying to squeeze the lemon by hand. I think I tried this recipe a while back, and it was very good.

Thank you so much for sharing this recipe! What I love about your recipes is that you really capture the essence of Mediterranean cooking by using refreshingly simple, few yet flavorful ingredients to make your dishes. I just made this dish on a whim since I had 95% of the ingredients and it turned out AWESOME! The original recipe is spectacular but I had to make just a few substitutions because of dietary restrictions, etc. but this recipe is versatile so it worked well. I can't eat green onions so I substituted cucumber instead and it added a nice a little additional crunch. I also didn't have any cherry tomatoes so I added some of sundried tomatoes I had left from a previous dish. Definitely will be making this dish again!
