Hi everyone!!! Since I was sick all weekend I managed to still get a stay fit sunday up yay!! I did a simple recipe just because I wasn't feeling all that hot and running to the grocery store pretty much drained me! Let me know what you all would like to see next! Or if you have a recipe that you would like me to make into a "healthier" version… I would be up for the challenge! Thank you so much for watching and hope you all have a wonderful week! Much love! INGREDIENTS:
1 cup dried whole wheat orzo
1/2 cup feta
1 medium cucumber, chopped
1/2 red onion, chopped
1 cup grape tomatoes, halved or quartered
1 2 oz can of sliced black olives
1/2 lemon
1 tbsp extra virgin olive oil
Dried oregano, black pepper and sea salt for seasoning
DIRECTIONS:
1. In a medium pot bring water to a boil and add in orzo and sea salt. Stirring frequently so orzo does not stick together. Cook about 10 minutes.
2. Cut up red onion, cucumber, and grape tomatoes. Add to large bowl with black olives, feta cheese, olive oil, lemon juice and seasonings.
3. Drain orzo when done and add to bowl. Mix and serve.
Servings: 5
