The Best Vegan Lentil Spaghetti Bolognese

I learned this lentil spaghetti bolognese recipe from my boyfriend's Italian granny, which happens to be vegan, it is so delicious that I keep coming back to it from time to time.

🍝 Ingredients (for two people)
Brown lentils 150g
Carrot, diced 75g
Onion, diced 75g
Celery, diced 35g
Olive oil
Garlic, diced 2 gloves
Dried chillies 2
Tomato puree 4-5 tbsps
Vegetable stock 500g
Salt
Pepper
Parsley
Pasta
🍴 Methods
1. Soak brown lentils overnight ( or at least 8 hours).
2. Drain and rinse lentils, put in a pot and cover with cold water, bring water to boil and cook lentils for 5 mins.
3. Sweat carrot, onion and celery with olive oil, when the vegetable dices become soft, add in diced garlic, dried chillies, tomato puree and lentils in step 2, stir well.
4. Add vegetable stock, bring it to boil, then turn down heat and simmer for 40-50 minutes, or until desired texture (add more water if needed).
5. Season with salt, pepper, chopped parsley and more olive oil. Mix well with cooked pasta.
