I cook my pizzas on my 22" weber kettle with a 3/16" thick piece of steel. I preheat the steel in the oven at 500°f and transfer it to the kettle that has a full chimney of hot coals banked to one side of the kettle. I add wood chucks for fire with vents wide open and I put the lid on with a gap on two sides to create a massive amount of airflow to get the temperatures to around 700°f in the kettle. I rotate my pizzas because the fire is on one side and do not want to burn it. I will try the way Eric is showing and I'm excited to take pizza making to the next level. Cheers!

Dude, if I were rating these pizzas on looks alone, yours is better. I like a thinner crust, and I like more well done. Pizza is probably my favorite food, and I've had many.

Looks amazing but OMG the work that is put into it. The Erik way can never be a dad pizza, too much prep and work in my opinion. Having said that it could be fun to try on a weekend.
