A tip from my mom. You should add the salt and dressing later when you’re going to eat. It keeps the veggies fresher and they don’t get soggy as fast.

Quinoa salad is one of my staples! Yummy and filling. I’m allergic to almost everything so this is a great option for me. I usually eat it with some kind of chicken.

IMPORTANT: Quinoa should be rinsed before cooking. This removes its natural protective coating which is bitter and indigestible.

I use to eat quinoa salad all the time during my uni days too! Mine had cilantro, cucumber, lime, sweet corn, tomato, onion, avocado and i would add chicken 😋

I’m addicted to this same meal but I use cilantro instead of parsley. I can’t get enough of it! I also had chick peas or black beans.

Fry quinoa in little olive oil for couple of minutes, then pour water + stock cube. Cover and let simmer on low heat for 30 mins.
Chopped parsley + chopped spring onions + chopped tomatoes. Mix with the dressing and add to cooled quinoa. Top off with some fresh mint.
Dressing; lemon juice, olive oil, garlic, ginger + salt, then shake altogether.

I make almost this exact salad, a big batch and live off it too but here’s a tip: zest the whole outside of the lemon and add it to the dressing…life changing

Made this a couple weeks ago but instead of green onion, I used cucumber. Added minced mint in there too instead of just for garnish. Very good! Also added pepper and cumin

Hello to anyone who sees this. This is genuinely one of my favorite recipes, and this lady purposely doesn’t put it in her video so you can click on it multiple times, it’s bs. (Not subbing to her because I really don’t like YouTubers who do this or have the audacity not even to post the link for directions.)
I do love the recipe however; Here it is:

Ingredients:
1 Cup of Quinoa
1 and 1/2 cups of water to boil it in
2 cubes of chicken bouillon
3 cups of minced parsley (finer the better)
3/4 cups of chopped green onion
(Optional, but can have 1/4 cup of mint)
1 and 1/2 cups of diced tomatoes
(2 cubes of bouillon)

Dressing:
1/2 cups of olive oil
3-4 lemons squeezed, depending on size. 1/2 cup
2 teaspoons of minced garlic
“Says a pinch of salt, 1 and 1/2 teaspoon ish”

Directions:
Wash quinoa to get rid of tannins (it’s not good to eat quinoa unwashed at all);
Toast it up in a pan with some olive oil for a little bit.
Boil some water and put toasted quinoa inside it for 15 minutes. **Mix in two cubes of chicken bouillon 2tsp**
Steam quinoa for 5 minutes after cook time.

(Pour dressing on veggies seperate from the quinoa it’s self. You can mix it all together and serve, or keep it separated if you’re worried about the quinoa going soggy.)
