Chilli Oil

Here’s the recipe -

Ingredients -

1/2 Cup - Dried Chilli Flakes
1 Tbsp (7g) - Kashmiri Chilli Powder
1 - Tbsp (7g) - Sesame Seeds (Optional)
2 - Garlic Cloves, Grated
5g (0.2oz) - Ginger, Grated
1 Tbsp (9g) - Sugar
Salt to Taste
1 1/2 Cups (320ml) - Neutral Oil
1 Tbsp (20ml) - Soy Sauce

Method -

Heat the oil for 2 minutes over medium high heat, add all the ingredients into a bowl except the soy sauce and pour the hot oil over the top. Mix to combine. Add in the soy sauce, mix well and place into a sterile jar or container.

I made a mistake in my script, the chilli oil will last 7 days in the fridge. 🙏 it will last many months without the garlic

Make sure to use a bowl that can deal with temperature shock. I've got a useful scar on my left arm to remind me of that tip.

When the oil is hot(before smokes comes out) pour some at the ingredients in order to make them catch up the temperature. And wait until smokes come out from the oil in that moment you pour all of it on the ingredients.
Lower temperatures take out the spiciness of the Chilli, higher temperatures takes out that delicious flavor.

Garlic kept in oil can create the perfect environment for botulinum. Without the addition of a low acid/vinegar; this should be consumed within 10 days

Use dehydrated garlic and it lasts for months :)

when the oil is super hot, don't pour it on any plastic, in this case it's the funnel. And let it cool down totally before closing the lid

Bro I thought of adding that because I got that at home. But I wanted to add the Chinese chilli powder that doesn't affect the taste. Lol.
