Never did meringues before. I made certain there wasn't any yolk in my mixture. The eggs stiffened when I whipped them. But when I whipped them with sugar they just didn't achieve the level of stiffness that I see on this video. The mixture remained a bit runny.

I’d change this to be about 270 degrees Fahrenheit and whisk in the corn starch and vanilla with a mixer, folding often results in losing air and stiffness.
