My most valuable newbie tip: If your house/apt. only has access to a chlorinated water supply, used bottled or filtered water from the supermarket which has been filtered of chlorine. Chloramine is used in most US metropolitan water supplies- not chlorine. It doesn't off-gas and really inhibits the yeast activity in your starter. It took me a number of months to get an active starter & high-rising loaves because I was using water from the tap. Lesson learned the hard way. It's worth paying for filtered water & decent-quality flour.

Great video! I've been baking a lot lately and you have a lot of helpful shots that demonstrate the consistency of the dough at important steps notably during the shaping and the example of how a finished bulk fermentation looks. Thanks!

Can you please give some guidelines as to when and under what circumstance you should oil your work table, and not use either a spray of water or a light application of flour on the surface----I appreciate your help! 😄😄
