That display would sure be nice and visible. I’d like a display that could be easily seen while watching powder fall from the trickler.

Reduce your variables. You have pressure on one side of that load cell, no shieled cables or twisted ground and dupont connections are trash for expection a solid connection. I'd like to see this repeated with soldered connections and two bolts on a solid level surface with shielded and twisted wires.
