CHOCOLATE CHUNK ZUCCHINI BANANA BREAD! 6g. protein per slice, ridiculously moist, and perfect for using up that summer zucchini surplus! 🍫🍌

This easy zucchini bread is a fiber- and protein-packed treat you can feel good about. It’s naturally sweetened with banana and maple syrup, and made is just ONE BOWL, no mixer required! Perfect for breakfast or a healthy snack.
YOU’LL NEED
-1 c shredded zucchini (about 1 medium zucchini)
-1 large ripe banana
-6 large eggs (at room temperature)
-3 T pure maple syrup
-2 T coconut oil (melted and cooled) or canola oil
-1 tsp pure vanilla extract
-¾ c coconut flour
-1 ½ tsp ground cinnamon
-¾ tsp baking soda
-¼ tsp ground nutmeg
-⅛ tsp kosher salt
-4 oz dark chocolate (chopped into chunks or dark chocolate chips, divided)
Bake at 350°F for 30-35 minutes. Cool before slicing. Enjoy!
