It is measure of effects of carbohydrates on blood sugar level
Carbohydrates that break down quickly during digestion & releasing glucose rapidly into the circulation have a high GI.
Carbohydrates that break down more slowly , releasing glucose more gradually into the blood stream have a low GI.
Why food with low GI has health benefits ?
When a person takes Low GI food it leads to lower glycemic response which in turn leads to lower insulin demand.
This helps to control blood glucose in long term.
