Rice is a staple in many parts of the world and with the Diabetes Epidemic around the world, there is increasing interest in and spotlight on Low Glycemic Index (GI), especially on Low Glycemic Index (GI) Rice. But Glycemic Index is at best a useful partial aid in helping to guide better food choices, especially if the goal is to lower post meal blood sugar, Glycemic Index if not well understood and wrongly used can be misleading and uneven unhelpful. This video on the various different types/kinds of rice is part of my series of videos on Glycemic Index as well as Diabetes, GI, Grains and Rice.

Apparently cooking the rice then letting it cool and putting in the fridge for 24 hrs lowers the GI by about 50%
