Forget messing around with the kitchen scales, my one-mug method is a brilliant trick for getting perfect pancakes every time. Simply use the same mug to measure out the flour and milk, then add your egg. It couldn’t be easier!

While I love the idea of caramelised banana, what I don't get is why you'd do it in olive oil. There are plenty of neutral oils out there, so I don't see why you'd opt for one that adds a flavour which, to me at least, doesn't mesh with the remaining ones. Other than that, nice recipe!

In case anyone is looking for a gluten free, plant based version. This is what I love:

120 g oat flour*
approx 250 ml unsweetened plant based milk (almond, rice or coconut works well)
1 very ripe banana, mashed with a fork
a pinch of baking powder
cinnamon, cardamom and vanilla
pinch of salt

Mix everything together and fry in a non-stick pan. The batter should be easy to pour. Add more plant based milk in case it is too thick.

Serve with coconut yogurt, some fresh fruit and a drizzle of high quality maple syrup.
You can top it off with some roasted almonds.

*If you have a high speed blender you can use regular oats and put them into the blender. You then can add all other ingredients and blend everything together.

The easy way to flip your pancake without getting messy is to make smaller pancakes with half of that half banana. You end up with 12 pancakes instead of six and you can cook two at the same time.

I love the idea of caramelising one side of the banana first and pouring pancake batter over it, allowing it to cook together, rather than mashing the banana and adding it to the batter. Adding cinnamon in to the batter too, ooh yes please. I will certainly give this recipe a go. Thank you Jamie Oliver. 🇦🇺🍌🥞🍯🥜🥛 sorted
