I prefer smart hdr turning off.
I just took 2 shots for every photo. 1 with hdr off and 1 hdr on. And will select which one is better photo.

Why would JPG and H.264 look sharper and crispier than HEIF and HEVC? The latter are simply newer, more capable formats.

I turned HDR off and my pics look better and more realistic. Plus sharper.
