I love the Trails of Apollo explanation for it. When asked why the sun is still there he basically just looks at them and says “You think I’m the only sun good? Ra’s still got his stuff going.”

My theory is that the chariot has been doing its rounds for so long, that the horses pulling just know what to do.

That or Hellios takes back over.

Interestingly, in Rick Riordan's writings, Apollo explains that while yes, he is the sun god, the sun is also just a big fucking ball of gas in the sky.

Rick Riordan actually has a great in-universe explanation for this in Trials of Apollo. In the first book, Apollo contemplates the same problem, then remembers that there are other sun gods from other pantheons technically operating the same duties.

I like the idea that at first Zeus asked Helios to do it, but as it became more common, he just knows to do it when the sun isn't moving for a long amount of time, and Apollo doesn't know about this, so whenever he's finding his love of the week and starts hanging out with them and sees the sky is moving both him and his love are confused

I think the Trials of Apollo series by Rick Riordan gives a good answer for this. In the series, the Greek gods are all aware of other cultures’ beliefs and are even aware of physics. I don’t remember the exact quote, but I’m pretty sure Apollo says something like “The universe doesn’t stop for anyone, not even gods.” or something like that.
