Chicken Chipotle Black Beans Soup - Glen And Friends Cooking

Ingredients:
Oil for frying
1 medium yellow onion, chopped
1 jalapeño, seeded and chopped
3 garlic cloves, crushed
750g (1½ pounds) boneless, skinless chicken breasts
Salt & Pepper to taste
1.25L (5 cups) chicken broth
5 mL (1 tsp) chili powder
5 mL (1 tsp) paprika
1 - 284 mL can RoTel
1 - 127 mL can chopped green chilies
1 - 540 mL can black beans, drained and rinsed
1 - 540 mL can pinto beans, drained and rinsed

Method:
Heat the oil in a large Dutch oven over medium-high.
Add the onion and jalapeño; cook until translucent.
Add the garlic; cook 30 seconds, stirring constantly.
Stir in all of the remaining ingredients.
Cover and simmer 2-3 hours.

I literally just ladled myself a bowl of tomato, bean and Fresno chili soup. No chicken, but corn and onions. Great minds and all!

Add a little crema to cut down the spicy taste. Looks yummy. But since it's still almost 100 degrees in Yuma. Arizona today. I'll wait until it cools off to make this recipe .

I got heavily into soup making a few years ago. And learned that two ingredients that often aren't included in soup recipes that are necessary to create a traditional soup flavor are garlic and sage. They also have the added benefit of allowing you to cut back the salt without losing the flavor. However, I wouldn't have added sage to this soup. As it's going for a less traditional flavor profile for a soup. However, I think it might have benefited from a bit of lemon or lime juice at the end. Another trick for bringing a bit of life to a soup prior to serving.

I absolutely make a version of this with corn instead of pinto beans, and the addition of cream of chicken soup for body and a ton of green onions.. I like my soup on the thick side and around here this is known as "chicken crack soup" because people have been known not to be able to put it down 😂
