I cut this out of the episode, but I'm seeing this question show up in the comments, so let me clarify:

- The clock in the garage is ALWAYS stuck at that time in every scene you see it, at least in this episode. So the time it reads can't be used as a part of putting together an accurate timeline of events. Good job looking out for it, though!

I think the end scene Beth is real, but she is being cloned at that moment. This is her last meal with her family, that's why she's giving an affectionate goodbye.

Obviously the S4 finale settles things, but I'm surprised that nobody pointed out that executions are usually carried out in the middle of the night, so the clock in the execution chamber could have been at 2am rather than pm.

He realizes Beth could just still be filling as in her normal mother role while she waits for her clone to grow and then leave the next day right.

There's one small detail you didn't consider. It doesn't really matter which is the clone and which is the original since that's not even Rick's Beth. Keep in mind that Beth's Rick and Morty are dead and buried in the backyard while Rick's Beth was left behind in a world populated by monsters. Thanks a lot Morty! You and your love potion!

She decided to have one more dinner with her kids before she left, and was affectionate with Rick because she knew she would have to leave soon once the clone was ready (which was being made during the time they had dinner)

Then, she could sneak out later at night, Rick could replace her with a clone, and no one but them would be the wiser.

But that's just a theory.

I know this theory is solved. But even back then: What about this possibility: Beth decided to clone herself. But only after a last meal with her family. "To say goodbye". This could solve the time thingy and explain, why she and her father where so emotional.

Rick said the clone would never become self aware.

If Beth was a clone, Rick would’ve made it so she didn’t remember the conversation about potentially cloning herself (and thus she wouldn’t be possibly able to become self-aware).
