The cooling works better if you saturate water with salt, then cool it down to about -20°C. The freezing point of saturated salt water is -21°C, so the water is super cold, but remains liquid. Then do as Babish did, put your ice cream mix in a metal bowl, place in salt water and stir/scrape continuously. You get a better cooling effect because the water has a more even and complete contact with the metal bowl than the ice Babish uses.

I was just rewatching all the Binging with Babish videos and I saw this in the suggested "I don't think I've seen this one before" I thought. 😂😂 And yes I was right

Tip for making the custard: you need to put a little bit of cold water in the ice-salt mix so that it cools the custard mix down easily. The heat has a harder time transferring out of the custard mix when the bowl is in contact with mostly air, but when tis liquid it transfers way more readily. Trust me, I make a lot of this stuff XD!

For a really simple no faff icecream you can just whisk cream with condensed milk (1:1 ratio but doesn't need to be exact) add whatever flavours you want and freeze until solid. You don't need to stir at all during the freezing. This makes really good icecream, not as rich as custard based but still very tasty.
