Perfect Pan Seared Salmon with Lemon butter Cream Sauce and Crispy Skin

This pan fried seared salmon is poached in its own sauce rendering it flaky and moist. There’s the option of a crispy skin, by baking it separately if you wish to impress. It’s the only way to get a crispy skin with a cream sauce. Without the optional crispy skin, this dish is quick and easy to make and guaranteed to be of restaurant quality. Of course you need good salmon first, so buy it fresh from your local fish monger. These types of fish are generally cooked medium to medium rare so please don’t overcook it unless you absolutely must. Either way you will fall in love after your first morsel of this delectable one pan wonder dish.

I just made this and it was amazing ... highly recommend recipe... instead if the wine i used fish sauce and mixed it with water.. I also added 1/2 tsp of garlic ...

Made this tonight and I can’t even begin to tell you how much my husband loved it! He’s not really a salmon lover unless it’s sushi so him raving about this was awesome. And I absolutely loved it as well. So much flavor and super easy to make. Didn’t have parsley so I used chives instead and it was delicious. Thanks sooo much!

Thanks for sharing Chef Joel. Whenever I'm in the kitchen, I am always trying to achieve two things: improve the flavour of any given recipe, and try to make the process as efficient as possible by eliminating all unnecessary steps.

Last night, it took me 45 mins from start to finish to prepare two fillets of rainbow trout, side vegetables and baby potatoes and a Beurre Blanc sauce. In that time I also baked 3 small slow fermented ciabatta rolls. Needless to say, I was quite pleased with my timings, however, if I had used this recipe, I could have halved that time!

Been wanting to make this for a few months and finally went and made it and the sauce is so good 👍. I’d recommend anyone making this to add some garlic paste or minced garlic to the sauce.

Just flew cross-country and thinking about Recipe30' and his salmon recipe. I didn't have a lot of the ingredients but I did remember to only cook my salmon 1 min each side then remove from heat. Substituted white wine for red Cab; lemon for lime; shallot for fresh green onions; parsley for cilantro. Of course I had the heavy cream, good salt and pepper and quality butter. It was absolutely delicious! California style. Paired it with lightly steamed fresh spinach. Yum. Thank you Recipe30. You persist in my memory.

Here's my testimony lol. Cooking is not my forte but I try to find great recipes to use. I have cooked salmon so many different ways but none were too good for my taste.... Until now. This recipe was good omg. I couldn't believe it. So thank you Soo much for this recipe !!! 😱💖💖💖

I tried this and it was amazing. I used water and white vinegar instead of wine. Also i added garlic. It was amazing and super fast, totally recommend it.
