Kinda found methods 2 and 3 by messing around in Blender. But man, that first method ! I would have needed it a week or two ago xD

A fourth method is to change the Transformation Orientation to 'Normal' and scale z to 0

You can also select all the faces you want to flatten, click s to scale then press the axis you want to flatten them on then 0 (example, click: s, z, 0 to flatten on the z axis)

Scale to zero can also work of you set the scale axis to “normal”.
