You got part of it right. You do not need to add the apple cider vinegar, unless you need it immediately. Just putting the cloth over the top, and putting in a preferable cool dark place is enough. i had a designated 3-L bottle just for dumping ALL the leftover wines for years. The wine already has the cultures from the air to turn it to vinegar, so the old wine, a cloth top and a bottle, mixed with time is all you need.

I have to try this. My mom (and now I do) made her vinaigrette with red wine vinegar, cut with a little no sugar added grape juice to cut how sour it may be. A good base.

Silly question: can you make faux red wine vinegar? We don’t drink so we don’t have wine in our home. We do have do have these vinegars: white, balsamic & apple cider.
