Those who are saying it's not authentic, never stepped into a kitchen. It's common practice here as well to freeze the paste and masalas, in Marathi we call it 'Vatan' basically mix of coconut, onion and khada masala. Which is prepared for 2 weeks cooking need

one tip, as an indian who (kinda) cooks, after you add the masala, cook the masala until you see the oil seperate from it because masala needs to be cooked. it took me a while to learn that they’re not seasonings and actually need to be cooked because then they’ll taste uncooked. keep it cooking for 10 mins after you add the masala and trust me you will have more flavourful food with greater depth in your flavour and taste.

That's actually a genius idea. I am unable to cook at home as much because Indian cooking takes quite a lot of time, this will actually make my life so much easier. Damn, thanks man!

Instead of add spices 'raw' - Start with the aromatics and spices FIRST then add the onion, tomatoes, garlic and ginger. But changing the order, you will get a better taste. Oooh and in the aromatics, add cinnamon and cardamon.

I can confirm working moms like mine does have this curry paste saved in the refrigerator for about a whole week to use when they don't have enough time to start from scratch at every meal. Freezing with spices and using coconut milk sounds like a cherry top for vegan cooking 👌

I don't just make Indian pastes I also make Mediterranean, Mexican, Caribbean etc Freeze it the same way. I then freeze bags of the relevant chopped up veggies and label. Taught my Hubs how to fry off his meat and add his veggies and spice mix. He gets a healthy homemade meal if I am away.

We usually cook the spices in oil first then add things like onion or tomatoes, try it that way, this will enhance the flavour further ❤

Add spices to oil before the the tomato mix. Spices need to release their flavour into the oil…

In Indian Cooking, #sequence also matters.
Hot oil - 1) #Whole Spices to open itself (Bay leaf, Black Pepper, Clove, Cumin, Fenugreek Cardamom, Cinnamon, Mustered seeds, Coriander seed, Various seeds etc) -
#Then Green Chilli -
Then Onion Ginger Garlic (cook till it start sticking to pan)-

then Powders - Chilli, turmeric, Coriander, Garam masala, Curry powder, Aromatics, ( because Powder burns quickly & absorbs Oil).

Then finally, you add Tomato & let the gravy leave its Oil to the surface.

Now you add fryed Cottage cheese, cooked Chick pea, Kidney beans, Soya chunks or already cooked meat.

You can add Raw meat to Partially cooked Tomato step.
Both will cook togather.

This is perfect 👏 a small twist I would do is, in the oil first add the aromatics and roast them before adding the ground onion and tomato paste mixture. Use fresh tomatoes 🍅 and herbs👌🏽
This saves time and flavours are intact. Keep the frozen tray in a plastic bag to lock in the flavour and prevent all the food in the freezer smelling of spicy curry!

Yes this is an all time favourite curry at our place. As an Indian, we love our spices and veggies. Everyday a fresh meal is prepared using the local stuff. I feel proud when I see people from other countries prepare Indian food. Good luck and God bless ❤
