Part 1

Oil 1/2 Cup
Cinnamon 2 Pcs
Cardamom 1 TSP
Clove 1 TSP
Bay Leaf 2 Pcs
Cumin 1 TSP
Sauté All of above on Low Flame

Onion 500 Grams sliced add in Pan
Sauté Well

Garlic 30 Grams
Ginger 30 Grams
Salt 1 TSP
Sauté Well

Tomato 1Kg Pealed & Sliced - Add in the Pan
Mix Well
Boil for 15 mins

Bring Mixture to a complete cool and then grind it in chopper or food processor.



Part 2

Cashew 1/4th Cup
Melon Seeds 1/4th Cup
Hot Water 1/2 Cup
Soak 15 Min
Blend Smooth Paste



Part 3

Oil 1/4th Cup in a Pan
Turmeric 1 TSP
Chili Powder 3 TBSP
Coriander Powder 3 TBSP
Cumin Powder 1 TSP
Garam Masala 1 TSP
Sauté On Low Flame

Add Tomato Onion Paste
Sauté Well
Boil 20 mins till Oil Separates

Add Cashew Melon Paste
Mix Well
Cook on Medium Flame and keep stirring

Curry Base Ready.

My wife and I love Indian food. Many years ago, we were in an Indian restaurant and talking with the owner. He said to us that most of their curries started with the same basic brown sauce. Add vinegar and hot chilies for Vindaloo. Add cream for Korma, and so on.

I made this today and the base itself tastes great as a creamy side dish for idli/dosa! (I garnished it with coriander and freshly sauteed curry leaves for anyone who's wondering).
P.S: How long would you say this is safe to keep in the fridge for later use? A week?
