How To Brew - The Toddy Brew System

A workhorse of a brewing tool, the Toddy Cold Brew System will likely become a favorite addition to your cold brew repertoire. With a filtration system that makes for crystalline flavor and silky texture, it’s the method we use to make the cold brew coffees we serve daily in our cafes.

It’s also the go-to tool we suggest to use at home when making our New Orleans–Style Iced Coffee. Also try making larger batches of your favorite single-origin cold brew or cold brew with a higher concentration. With a filter that removes all of the coffee sediment, the resultant cold brew will stay vibrant far longer than it will take you to drink it all up.

You will need:
- Toddy Brew System
- 340 grams of coffee (one entire 12 oz bag)
- 2 quarts of room temperature water
- Coffee Grinder
- Digital Scale
- Spoon

Steps:
- Insert rubber plug firmly into the base of the Toddy Brewer from the bottom
- Prewet the felt filter and place inside the base of the Toddy Brewer
- Open up the paper filter and place inside of the Toddy Brewer
- Grind coffee on a coarse setting similar to a French press grind
- Pour ground coffee into the paper filter
- Pour water gently over the grounds being careful to not let the paper filter collapse in on the grounds
- Slowly stir the grounds to ensure all of the coffee is saturated, twist the paper filter closed and place the lid on the Toddy Brewer
- Let sit at room temperature for 12 to 24 hours
- After it is finished steeping, hold the brewer over the decanter and swiftly pull the plug from the base.
- Sit the Toddy on the decanter, remove the lid and allow to drain completely
- You now have a concentrate ready for use!

This recipe makes a concentrate that we recommend starting with a mix of 1 part concentrate to 3 parts water or dairy of your choice.

Be sure to clean your Toddy Brew System after each use
- For the Brewer use warm soapy water and rinse well
- For the felt filter, rinse thoroughly with hot water and store damp in a seal bag in a refrigerator until the next use

Just picked up one of these a couple weeks ago. Used the instructions on the first brew, but now just fill my antique hand grinder with beans and use some of my left over "Bunn" coffee filters in the bottom of the brew vessel. Am still on my first felt filter, but will be changing soon. It's surprising that with all the use the bottom of it is still very light colored. Of course the top is quite brown from the first brew on. I don't recall if the instructions recommend keeping the orientation the same throughout the life of the felt. I'm assuming tossing in the trash is the only recommended disposal, but sure wish it could be composted or otherwise environmental friendly disposal.

Why are you using 2 quarter (1.9L) of water and not 1.65L as recommended by the Toddy brewing guide?

Just recently, the coffee concentrate has developed a whitish film over the top and on the inside of the karafe. I have no idea why, I have been brewing toddy coffee for ten years and this has just started happening in the last several months. What am I doing wrong?
