The Best Cucumber Sandwich! by Rockin Robin

My cucumber sandwich is the best! It is loaded with vegetables like cucumber, tomatoes, red onion, radishes and so much more. My homemade balsamic vinaigrette takes this sandwich to a whole new level.
Remember you can make this sandwich gluten free by substituting the ciabatta bread with gluten free.
Cucumber Sandwich
Ingredients:
1 ciabatta bread
homemade balsamic dressing
cucumbers
tomatoes, sliced
red onion, thinly sliced
radishes, thinly sliced
spinach leaves
basil leaves
fresh mozzarella cheese, sliced
bell peppers, sliced
1 bulb garlic, roasted
avocado
Directions:
Preheat oven to 375 degrees F.
Roast the garlic first by slicing off the tip end of the garlic bulb to expose the cloves. Place bulb on a piece of foil, cut side up. Drizzle olive oil over the exposed cloves and seal the foil up around the bulb. Place in the oven for about a hour or until the cloves a rich golden brown color.
Slice the ciabatta loaf in half length-wise if you are making the whole loaf or slice off a piece for one sandwich and cut that in half to make a sandwich. Add several cloves of the roasted garlic and spread them on one half of the bread.
Drizzle the balsamic vinaigrette over the garlic cloves and then layer on the veggies starting with the cucumbers, bell peppers, red onion, radishes, and tomatoes. Add some sliced fresh mozzarella cheese, leaves of spinach, basil and or lettuce greens.
Spread a generous amount of avocado over the top half of the bread and place this half on romp of your sandwich. That's it! Enjoy!
