I love the care that you take in scraping out the various containers, such as the melted butter pot. This, to me, is the sign of a truly great cook. You respect the time taken to grow and prepare crops, and you obviously value the food. So much waste seen in many kitchens! The recipe looks so perfect. Jalapenos are so good, in Mexico we ate them by the bowlful.

I was able to produce 2 gallons of datil peppers this year from one bush on a Tower Garden. I'm about to make a second batch of fermented hot sauce, but so far the feedback on the first batch is that it's some of the best they have ever had. Datil peppers are unique to the Saint Augustine area of Florida and we're brought here by the Minorcans.

I have peppers from the garden that I froze. CAN I USE THOSE TO FERMENT?

I made a hot sauce for the first time this year using 4 types of hot peppers from my garden and purchased Thai chili peppers. I actually burned my sinuses and throat in the process. I had no idea it could be so bad. My daughter showed up to the house and because I had the fan running it was blowing it outside. She said when she opened the truck door she was hit with the smell and when she got into the house she started opening doors and windows saying it was toxic in the house the smell and burn was so strong. I laugh now but you can bet I’ll never do that again. 🥴. Great and simple idea, I’ll give this a try come harvest time next year. Thank you for the video. Hope you’re doing well post surgery.

Do you ever find it gets bitter from the pureed seeds, and do you have a way to control that (other than seeding)?
