In this video, Dr. Berg talks about the difference between virgin and extra virgin olive oil and coconut oil.

Virgin olive oil means unrefined and no chemicals involved in compressing the oil out and is very natural and pure.

Refined olive oil is where they are using a chemical process, high heats which end up in a very refined product with very less essential fatty acids, fewer phytonutrients, and has no odor. And the extra virgin olive oil is the initial oil that comes out when they do the filtration process.

For the coconut oil, virgin means unrefined where they are not using high heat, bleach, and chemicals. And extra virgin coconut oil is just a marketing term. Both terms don’t have any difference.

Sorry Dr. Berg. You didn't clarify the deference between the Virgin and Extra Virgin Olive Oil. You only clarified the deference between Refined Olive Oil VS Virgin Olive Oil

Also, be sure that your Extra Virgin Olive Oil has not been tampered with. Here in the U.S. over 50% of them are half Canola Oil. I stopped using the one I always purchases and my LDL dropped by 50 points. It was the only change I had made in my Healthy Keto & IF lifestyle. There are sites that can be found online that will tell you which Olive Oils are pure. Ahaha, the comments, such goofs.

EVOO can be cold pressed, first press, and extracted without chemicals and still not be EVOO and this would be when the free fatty acid % is above 0.08. Also depending on various factors the fruit sent for processing may be suffering from any number of diseases or something like frost damage and this, if bad enough and detectable would make it not EVOO. For instance here in Australia the Leccino variety commonly suffers from anthrac nose which is a bacteria that naturally exists on the tree. When the right weather conditions permit it really destroys the fruit and the result in the final product oil will be that it has a distinct metallic taste to it. I've lived on an olive grove for 10 years and operated an olive harvester for 6, generally the problem is that countries do not have regulations on olive oil imports and these can be mixed with other poor oils. So when you go to the supermarket and get that cheap Italian/Greek olive oil just beware it might not be as you think. Generally, if EVOO really is EVOO when you put it in the fridge it will turn mostly solid. Don't throw it away! It's just fine, let it heat up and keep in a cool dark area when not in use.
