Seems a bit odd. My grandparents were farmers in the 1950s. His daughters (one of them my mother) grew up on farm fresh food. I spent my summers as a child working on the farm. What we had on the dinner table was green beans, potatoes, spinach, eggs, apples, tomatoes, beets, turnips, sausage, and chicken on occasion. We were healthy and well fed. We didn't juice or eat kale so it might be different for what you are saying, but vegetables have been a major part of our diets, modern and in the distant past.

16 months ago i went carnivore to save my life. I had been on prescribed opioids and other meds for 20 years and was disabled prior to the diet. 5 months after going carnivore these changes happened:
1. Chiari Malformation...gone
2. Syrinxes....shrinking
3. Flattened discs.... repairing
4. Diabetes type 2...gone
5. Joint inflammation...greatly improved
6. Lyme Dis ase symptoms...greatly improved
7. Skin issues...clearing
8. Brain fog...gone
9. No longer needed opioids
10. Thyroid now normal and goiter is gone.
And after 16 months im even better
I do still have terrible occipital headaches and some spine pain, but i no longer need my wheelchair or cane.
What i eat:
1. Primarily beef with 25% fat
2. Some pork like ribs
3. Some dark meat chicken with skin and fat.
4. Some eggs
5. Grass fed dairy..cheese, milk, and sour cream (no cellulose)
I feel better at age 52 than i did at 25. And i lost 89 lbs without exercising. My husband lost 82 lbs, got off his heart meds and now my son is on it for his non-alcoholic fatty liver disease and he is getting better.

As someone who has tried a lot of different diets I will say this.
I have lost weight and felt good doing a low carb keto/Atkins type diet.
Then I also did a juice diet. Drinking freshly juiced veggies and fruits 3 times a day and nothing else. During the time I did this the I lost fat very steadily while also being able to slowly increase the weight I lifted in the gym. I also had tons of energy and my skin was glowing. I didn't have any problems sleeping or any deficiencies. A few people so told me it looked like I had hair growing back in my bald spots and they had no idea I was juicing. We are supposed to eat fruits and veggies it's food from the earth, they are not the problem. The problem is the way they are grown and processed today. The soil most veggies are grown in are stressed and deficient in minerals. Then they are sprayed with pesticides and fertilizers and it's going to be what's cheapest not what's best

It's not just anti-nutrients that lowers nutrient absorption, it's also the fact that plants bind their nutrients in chemical bonds that we cannot break. EG fiber, which are strings of glucose that cannot be broken down into glucose. The same is true for other nutrients as well.

It's not the vegetable. It's the ground they're grown in, the pesticides, the handling of them. That's why more people are growing their own food. The contamination is the problem from the start of the plant.

Fermenting is by far the safest way to consume plants. As Dr Natasha McBride says. The only thing in this world that can digest plants is microbes.

Ain't this why we soak, wash, cook, boil, or ferment/pickle vegetables? To avoid the anti nutritient chemicals that cause problems? 😅

If plants, especially leafy greens, have natural pesticides, why did all my plants in my garden get their leaves eaten into an oblivion of holes by bugs every year??

When someone says that one animals develops all these problems when eating a certain food, just take into account that dogs would die if they ate chocolate..

You're right about Veggies, but as a farmer, wild livestock cows, horses etc. eat meat every chance they get. They eat any animal they come across on the ground. Birds, mice rats, snakes etc. See it all the time.

Everyone needs to be reminded what fruits actually are too. If it carries the seeds, it's fruit, like cucumbers.
