How to Force Close Apps on Android Phone (Running in Background)

I can't even get to the screen. Youtube just locks up my phone completely. The lower buttons don't work. Can't exit YouTube at all. Using the drag menu from the top shows up, but if I try to enter any app from there YouTube stays on top of any app I open. The YouTube search bar disappears too. I have to restart my phone every time this happens.

what is the difference between force stop and regular close?

I lost all my game data and the game techs told me to "force stop" after google synced. thanks
