I wish YouTube chefs would stop talking about hanger steak like it’s a secret chef’s cut nobody knows about. There is only one per cow and bistros outbid the meat markets. I know of only two grocers in Dallas that sell it and it’s ~$17 a pound. Back when I bought it for $8.50 it was a steal. At $17 it’s hard to justify. That’s a similar in price to wagyu sirloin flap, wagyu chuckeye, USDA prime outside skirt even some prime ribeyes. I like hanger but at the price it has competition from many other good cuts.
