Easily my favorite cut. So flavorful and tender, if cooked over charcoal to medium rare.

These are the cuts that many of us will NEVER see in our lifetime. I can get a filet, a ribeye, etc... but I've never even heard of this.

You usually won't find these at local butcher shops because they're often saved for restaurants as they will pay good money for them.
