This was my first time having the Butchers Steak aka A Hanger Steak! It was melt in your mouth tender and the flavor was excellent. It’s not a common find, but I’ve snagged a few off @meatnbone for a solid price in my last order from them! Definitely try it out!

I kept this recipe simple with just Salt and Pepper for the seasoning. Cook on medium high heat for 2-3 mins per side, with the goal of getting it to around 120 internal. I planned on butter basting to finish it off and realized I had left over cowboy butter and that was the perfect finishing touch! When the internal temp hits 127-129 let’s pull it off and let it rest!

while there is only one per cow, you are eating a half of one, cut down the middle to remove the silver/tendon out of it

You get one piece of meat that seperates into two halves with a central piece of gristle, when trimmed you end up with two steaks.

In this video you're clearly using one half of a trimmed piece of meat.

There is a butchery video online from an English Butcher who calls it an "Onglet Steak" (which is the French name for it.)
