Thanks for this video. Someone mentioned on the Apple forums that charging both the iPhone and Watch fixed it and that's what worked for me, thanks for reinforcing that to be the fix!

After numerous attempts, I changed the language again to Portugese then Afghanistan as Country. I was able to update the apple watch. I had another stumbling block when the watch was stuck in signing in to icloud account for hours. I just chose skip and continue when the iphone was asking for me to update the watch again then restore from back up or set up as a new watch. I hope this helps.

Try delete old Apple Watch backups
On your iPhone go to Settings > General > iPhone Storage.
Scroll down until you find Watch and tap on it. delete all the back ups. Also try ... Delated the Watch app and reinstalled and also hard reset your apple watch by holding down the side buttons. Make sure the watch is 100% fully charged.

It worked! My Apple Watch is updating now! I just force restest my phone and watch and then I deleted my watch and I made sure that my watch was chraged and it work!

Okay, I called apple and we tried everything let me tell you what works when all else fails. You need to connect your watch to an older iPhone (i used an iPhone 8 with ios 14.8 and a series 6 watch), pair it and then unpair it entirely. It will then pair with an iPhone running the current IOS (16.3.1 as of today) I promise it works
