Your video is dead on accurate as I couldn’t pair my watch to my ew iPhone 15 Pro. Old phone was wiped and couldn’t be paired. Thanks for the video it was very helpful. My software on my old iphone was up to date but I still had to do the 2 hour watch-9 update - my old iphone did not support that level.
I had my old iphone and had to unpair the watch from that phone - it ask before doing the reset (during the unpair) if I wanted to retain my cellular plan. I chose that option and I didn't need to set up cellular during the watch install on the new phone.
I did restore from an old backup but the backup was 3 years old!!! I didn't realize that apple wasn't backing it up to my old phone. The unpair forces a backup to be stored on the iphone storage. If I had know this, I would have unpaired before I did my last icloud backup on the old phone and that backup would have been placed on the new iphone during the restore of the backup.

That's the thing I forgot my Apple ID to my old one and I don't have access to it and I'm not into it like I can't get into it so I'm stuck. I'm never gonna be able to use it anyway there's no way.
