I find the price of (pork) ribs in the Netherlands going skyhigh. For the thick (Iberico) ribs the pricing is around 14 to 20 EUR for an full slab. When eating with four adults it's way to expensive for what you get. Great to see this video, keep up the good work PitmasterX and crew 🔥👊🏻

Brisket was once a cheap cut. Connective tissue, with time and temperature, turns into gelatin and flavor. Barbecue makes what isn't "good" into amazing.

For me it doesn’t really matter that much. The only thing is dat after I started making my own ribs on the kamado, ordering ribs out just doesn’t do it for me anymore. Whatever ribs I buy from my meat dealer, they’ll always be better.

Analytically, you could take out the bones & waste, weigh that. Then you can use a rough rule of thumb based on the idea that any set of ribs with the same number of bones will have the same waste weight, and determine "fair" price according to what the whole piece minus the bones weighs.

Roel, I've seen a lot of videos, not just yours, with pitmasters using pellet smokers. From what I see, the pellet smokers don't make that nice blue smoke necessary for good BBQ. Are you getting the smoke flavoring using a pellet smoker? I'm skeptical. Maybe do a comparison cook of a pellet smoker vs other smokers that really do obtain that nice blue smoke. Your opinion/comment is much appreciated.
