Cheesy! I love this idea. And yeah, pre-shredded cheese is also coated in starch and other additives that keep the strands from sticking together in the bag...

Mix 2tbsp water + 1tbsp Gelatin, set aside.
Mix 24 ounce cheese in food processor
Add 2tbsp whole powdered milk 1/4tsp cream of tartar and 2tsp salt to the cheese and mix well in processor.
Bring 1 1/4 cup whole milk to a boil and turn off immediately, add gelatin to milk and dissolve.
Pour milk mixture over the cheese mixture and stir well.
Pour into molds, press down and cover..
Refrigerate for two hours.

Preshredded cheese has noncaking ingredients in it which a lot of time is a type of wood pulp. That's why they don't melt as well as home shreds as well. You can accomplish this short term at home by tossing in a little dusting of cornstarch.

Sodium citrate doesn't make it grainy in my experience. I've done it dozens of times. It's almost fool proof and works quite well with reproducible results.

Sup Greg, love the easy recipe, I've made old one few times, does vac seal well, have to check difference, think I heard the bagged shredded cheese is mixed with a cornstarch and a food science powder or something so doesn't clump, and makes bad texture in cheese sauces.. doesn't melt as well, I can have fun making my own lol. I'm failing fast, and sick of paying for Velveeta bro lol. My first batch gonna be jack and young asiago 👍, have it, be great on burger, about only thing can eat without pureeing, has to be thick, non packed, non toasted bun, no lettuce, bacon, pickles lol. The burger you made looks awesome, I don't think was too much cheese lol. Enjoy summer there, get in jeep and have fun while can brother, good to see another video 👊, tyvm tc 🍔

Pre shredded cheese is coated with either potato starch, or celluse powder.

Sodium citrate is used to inhibit the cheese from hardening at room temperature. If you are making queso from scratch you would add that ingredient. For a nice cheese to put on a burger it is not needed.
