Cool Science Trick: Scared Pepper

This is a really simple science trick that you can try in your kitchen. Here's what you need:
1. A shallow dish
2. Some water
3. Pepper
4. Dish soap

Pour some water into a shallow dish. Shake pepper onto the water. Stick your finger into the water. Nothing will happen. Now dip your finger in the dish soap and then stick your finger in the water. All of the pepper will "run away!"

Why does this happen?
The dish soap is special chemical compound called a surfactant. Surfactants lower the surface tension of water. Before the soap is added to the water, the surface of the water is unmoving. The water molecules are locked in place because they are strongly attracted to each other. The soap breaks up this attraction and pushes the surface outwards taking the pepper with it.
