Crispy Pizza ASMR!

Many people associate outdoor ovens with 90 second bake, soft bottom Neapolitan style pizza. You can achieve a super crispy and crunchy bottom in any oven though! Just listen to the crunch on this 14” pizza I made in the @gozney Arc XL!

Really this is all about temp and moisture management. I like to heat my stone up to 850f degrees, then reducing the flame to medium low before launching the pizza. This allows for more surface contact time with the stone for the bottom to crisp up.

As soon as i pull the pizza out of the oven, it immediately goes on a baker’s rack to cool and allow moisture to escape. After a 2-3 minute rest, i like to place the pizza back on the stone for another 30 seconds to seal in that crunch factor!
