Spoiler alert: that $8 veggie side of the day at your favorite restaurant was probably blanched one or two days before you were served it!
This is not only my favorite way to cook broccoli, but also SO convenient for meal prepping. Just blanch your broccoli with ½ tablespoon of diamond crystal kosher salt per cup of water, shock it in an ice bath, and dry completely before storing in your fridge for 5-6 days.

Eight years back of the house and I've never seen anyone do this. Additionally, the more you cook vegetables, the more vitamins they lose.
