In this easy cooking video, I make some chicken vegetable soup in my Instant Pot Ultra pressure cooker. The ingredients to this recipe are 1 whole chicken, 1 lb baby carrots, 3 stalks of celery, 5 red potatoes, 1 tablespoon of onion powder, 6 cups of water, 3 chicken bouillon cubes,1 lb of frozen mixed vegetables, and salt and pepper to taste. I cooked the soup for 20 minutes on the pressure cook setting, and released the pressure after it had been in the pot for 90 minutes, but it could have been released sooner. Then I added the mixed vegetables, and cooked them on the saute setting, until they were tender.

Hey man, I'm a very low income 22 year old living alone off of a college campus. All I ate was Ramen noodles, microwavable mashed potato powder, and spaghetti. I never thought about cooking real food, because I was one of those people who was under the impression that "real" food like this was to expensive for me. then a little while ago my coffee pot shattered and I knew I wouldn't be able to buy a new one for a while, but I found your coffee saucepan video and it saved my life at the time. I kept watching your videos, and learned that with my budget I was actually able to afford to make actual food. I cook regularly now, even in this tiny and cramped apartment with hardly any counter space. I've actually learned to love cooking, and that's something I never thought I'd say.

A lot of the flavor is in the skin I’m leaving mine on . This looks delicious 😋 Also from watching your video I’m going to cook the chicken by itself first then add the vegetables

That's looked wonderful. Just a tip, there is a min and max line on the side of the pot. That's where it went wrong. Also you can do a full chicken in water and herbs for 25 min the scoop out and take bones out then add veggies and do another 15 min. Then it's perfect. I also make 2 batches out of a whole chicken and freeze it. Then you get more and I just add extra seasoning and water and set aside 1/2 the amount of chicken. Just makes more meals if needed. 😊 hope this advice is helpful. Loved your video! (Oh and because it preheated this adds to the cooking time so it actually start a to cook whilst preheating. I also sit it aside with lid on to keep warm for 10 min with anyway and it slowly cookes. You can even have it turn off and leave lid on for 10 min & will still cook too. With out the keep warm on. 😊

So far your video is the simplest recipe which was what I was looking for. Haven't decided if I want to use the whole chicken or buy boneless pieces since they'd be easier. But I think some people believe there's still lots of flavor that comes from having the bones and cartilage cook with everything else. Just seems kind of a pain separating the bones later is all

Nothing better than IP soup! I like making stock from turkey carcasses. A slightly different flavor, but still delicious for chicken soup.

Great recipe Jim I tried something similar in my slow cooker the first time I added chicken stock instead of water and it turned out amazing the second time I added 2 cans of cream of chicken soup and 2 cups of water and it turned out fantastic it was a real hearty meal

You can't beat chicken soup for a good, wholesome meal, can you? This is a good, ready to eat recipe. Could I suggest that you put a whole, peeled onion in the body cavity of the chicken when cooking it? It will add a lot of flavour to the flesh, especially as you didn't use the skin, and you can just leave it in the carcass when you remove it. You can still add the onion powder if you like.

Just an FYI - I was looking up recipes for marrow bone broth for dogs (daughter's dog has a gut issue we're going to try to help out because docs haven't gotten to the bottom of it yet), and recipe said don't give dogs onion or garlic. Carrot and celery is fine. Not sure about onion powder, but the fact you left out fresh onion is a good thing. Your soup looks really tasty!

You provided us with the caution that those level markings in the pot aren't just decorations. I hope it wasn't a big chore to clean up.

Love your recipe. However, it might have helped you if you would have placed your chicken into the trivet and then put it into the instant pot. Then it wouldn't have been so difficult pull out of the instant pot once it is "falling apart and cooked". The veggies would surround the chicken and you would not have put too much in so that it boiled over. To save time, and money, buy a rotissire chicken which is usually cheaper than a whole chicken, and add it with the veggies. You would still have to debone the chicken. This is a great recipe for a cold winter if you have the sniffles. Thank you for posting....Joyce from Sunny Florida
