Nice! A trick I learned from my mom for making beef stew: salt, pepper, and flour your meat before cooking it in oil, then just brown it quickly on all sides, deglaze the pan with red wine or stock, then add vegetables and other seasonings, bring to a boil then simmer. The flour on the meat should be enough to make it decently thick, and can add some more roux after if it’s not thick enough.

A tip for cutting the onions

Place a full glass of water next to the board, I can give a whole explanation why it works but it basically pulls the fumes of the onion away

And never rub your eyes during onion cutting unless you’ll wash your hands beforehand, If you are really unlucky it can sting for a good hour

it's nice to see you cooking something on your own.. In the past it was always reheating things in the pub, and now it's always assembling things in the new restaurant.... I think this might be the first time you've shown your self.. cooking something..

I know that food prep is cooking.. but it's also not really the same thing.. Hope the stew turned out great :)

Never knew about tarragon till a few months ago. Fiance makes honey and tarragon sauteed little bulb onions and shredded carrots. Pretty dang good.
