Solar + water power + the ever-cheapening-battery systems would be the best answer. You're very likely to have one source or the other operating, and for small gaps (days), the batteries will cover.

Would more youtube revenue be able to fund your venture? I fear if you only make one video per month it will fizzle…
I have seen some youtubers that go hard for a short time, doing a video/day for as long as they can sustain it… maybe a month.
Or consider a patreon account. It may feel weird but you are providing entertainment and many of us would be happy would be happy to throw 5-10bucks a month your way to see you make this project happen…

Rich first off I admire your work and I learn so much already just by watching. Wish I could hire you for a project at my home to learn more from you first hand. That being said: I do understand that work on the buildings is your #1 priority to keep cost down and to be able to live there soonest but I can't help but wonder if at some point you at least considered of piling up all the organic stuff and maybe get a shredder. You'd have much compost ready to use by the time you will want to start gardening.
