wagyu in japanese supermarkets can be incredibly cheap sometimes. the lowest i have spent was about 600yen (~4usd) on a small steak (about half the size of the one in the video). granted that was heavily discounted but not impossible to find. a steak like in the video would usually go for around 2000-3000yen. Also people tend to forget that not all wagyu is high end A5 grade expensive cuts. Those are still relatively expensive, but if ur fine with a slightly less marbling and less popular cuts it is honestly not that expensive. Also have been on the lookout for a year and haven't seen any guanciale here so far...

As an Italian I think this looks absolutely amazing!! wagyu fat melts at room temperature and is super tender so I think it’s tallow will give it a similar effect to guanciale. I live in the UK and it’s so hard to find here big fan of adapting recipes to what is locally available!! It’s often fresher and better than paying a fortune to have something imported :) I’d love to try this 😮😮
