Cherry Tart.
Tastes better than any cake!
For a tart with a diameter of 26 centimeters, I will need:
Sand dough:
Flour - 250 grams
Sugar - 100 grams
Salt - 0.5 teaspoon
Butter - 150 grams
Egg yolks - 2 pieces
Filling:
Cherry - 400 grams
Sugar - 100 grams
Corn starch - 40 grams
Cinnamon - 0.5 teaspoon
Cooking:
The base of my tart is made from shortcrust pastry. To make the base tasty and crispy, I mix flour, sugar and salt. Then I add soft butter and egg yolks. I knead a dense dough and put it in the refrigerator for 1 hour. During this time, the dough will harden a little and will not stick to the table and rolling pin when rolling out.
While the dough chills in the fridge I prepare the filling. I remove all the seeds from the cherry, after that I pour sugar, starch and cinnamon into it. I mix everything well and leave it to stand on the table for a while so that the cherry gives juice.
After an hour, I take the dough out of the refrigerator and roll it out to a thickness of 0.5-0.7 millimeters. Transfer to a tart mold. The form can be greased with butter to make it easier to remove the finished tart. Then I spread the filling and put the tart in an oven preheated to 180-200 degrees for 30 minutes. Once the base of the dough has turned golden and the filling has thickened, the tart can be removed from the oven. After the tart has cooled, carefully remove it from the mold.
Cut into pieces and enjoy the delicious taste.
