What am I doing wrong? I just waisted 6 eggs! I added the white wine vinegar, brought the water to a simmer, gently stirred and gently dropped my eggs in from a small bowl in and every single egg yolk separated from the whites. And the eggs are fresh. WTH? 🤷🏻‍♀️

From a noob standpoint, this tutorial was awful. Use a strainer to sift out a drop of egg white? Water until a pot walfway? What pot for how many eggs? Poke to see how it feels? At this point it seems like you missed the part where all pots are made different, and then electric vs gas stoves, let water come to... a boil, or A light simmer, or hard boil and then turn the heat down just hot enough where you dont wanna touch?
