I'm concerned that cutting the strings causes a very sudden release of tension - that can't be good for the neck.

It drives me crazy to see people winding strings, with all that excess string flopping around. If you're using any type of locking method to install your strings, cut them back about 6 inches before winding. Especially for beginners.
