I’d also recommend playing with different ratios of whole to puréed mustard seeds. I prefer half-half whole and puréed or even a little bit more whole mustard seed but to each his own

It really is better after a few days or weeks. first time I made it, after a day I was like, it's better from the store. After letting it sit a week or two I'm like, I'm never buying store mustard again.
